OUR CHEESES

Goat cheese is a dairy product with a high nutritional value: it is particularly rich in calcium and iron, essential elements for the mineralization of bones and teeth. The simple structure of the proteins and fats it contains makes it highly digestible.

Goat cheeses are therefore leaner and more digestible compared to cow's milk cheeses, and are generally better tolerated by those who are allergic to milk proteins.

CAPRA BLU

A blue cheese with an intense and slightly spicy flavor, excellent "as is" or in delicious recipes. The production process of "Gorgonzola-style" cheese requires great attention: the stars are the molds, responsible for its green veins. Their role is fundamental and must be carefully preserved: therefore, this cheese can only be produced with the purest, high-quality milk, without any chemical contamination.

GRATTA CAPRA

This cheese was born from the advice of a great chef and our desire to innovate and experiment. Thus, Gratta Capra was created: a long-aged, very flavorful cheese that can also be grated. A delight!

CAPRINO PASSATO

A concentrate of melt-in-your-mouth texture and flavor: a cheese for goat enthusiasts! The true goat cheeses are washed with a saline solution twice a week for four weeks, resulting in slightly orange-colored, decidedly flavorful cheeses.

NERINO

Beautiful and delicious! Melt-in-your-mouth and very white inside, covered on the outside by a light, edible black rind that frames the slice and makes it flavorful and extremely attractive. A gourmet product that makes a special gift, perfect for a unique and intriguing end to a meal!

ROBIOLA FRESCA

A liter and a half of milk becomes our Robiola! The cheese is white and compact, soft and creamy.
The final treatment with a pinch of salt sprinkled only on the surface makes it a versatile product, well-suited for both savory and sweet preparations.
Our Fresh Goat Robiola is handcrafted using only milk from our chamois-colored goats; it is processed raw to preserve all the quality and flavor of the milk directly in our farm dairy just a few hours after milking.

FIORONE FRESCO

Fresh cheese with acid coagulation, featuring a soft, moist, and easily spreadable texture. Delicious in its simplicity, it is a true concentration of milk. The curd is carefully placed by hand into the molds, one ladle at a time: this process makes Fiorone a slightly tangy and soft cheese.

VERO CAPRINO

Fresh cheese with a soft, moist, and compact texture, white in color. It has a slightly tangy and savory taste. True Caprino because it is produced only with genuine raw goat milk. The curd is drained from the whey on cloths for 24 hours, salted, and then placed back in cloths for another 24 hours. The small cheese cylinders are obtained using a manual stuffing machine that enhances their creaminess.

LATTERIA

Made from semi-cooked, medium-aged cheese, it has a strong taste with a slightly spicy note that surprises even the most discerning palates. The use of paste rennet gives it an extraordinary finishing touch: our Latteria is 100% goat because, in addition to the milk, the rennet used in processing is also from kid goats. The use of kid goat rennet in the paste helps in maturation to bring out the best nuances and aromas typical of the milk used initially.

CACIOTTA

Caciotta is perhaps the most classic and appreciated expression of goat cheese. Simple and tasty with the aroma of milk, it has a soft and elastic texture. It can be enjoyed on its own from breakfast to dinner and is versatile enough to be used in countless recipes. When young, it has a sweet milk taste which develops into a complex and persistent aroma typical of goat cheese as it matures.

QUADROTTO

Cheese with presamic coagulation, featuring a soft and elastic texture encased in a washed rind. The taste ranges from sweet and slightly tangy in young cheese to a more intense and persistent flavor in more aged varieties.

YOGURT

Medium creamy, with a white color and a delicately sweet and slightly tangy taste. Available both plain and with jam!

Goat milk is extraordinarily similar to human breast milk in terms of sensory properties: in fact, among milk varieties, goat milk was the first to be consumed by humans in ancient times. The cheeses derived from it are highly digestible, rich in calcium and iron.

Additionally, Agostino is a certified taster with ONAF (National Organization of Cheese Tasters), registered in the National Register of Cheese Tasters. ONAF aims to promote, disseminate, expand, and enhance the culture of cheese and dairy productions as an expression of tradition and the local territory.

Our dairy, HACCP certified, adheres to the 'Milk Quality Plan' of ARAL Lombardia, which imposes strict controls to ensure the quality of milk from the farms involved.

Our milk is sampled at regular intervals and analyzed, not only for average values (bulk sampling), but also for each individual animal, allowing us to identify any problems uniquely and intervene promptly when necessary.

Furthermore, regular checks are carried out on the cell count and the water used for breeding and cheese production, ensuring comprehensive safety.

Animal Welfare as a
Guiding Principles

 

Our goats belong to the Alpine Chamoisée breed, widespread throughout the Alpine region, named for their fawn coat with black points resembling that of the chamois.
They are medium to large-sized animals, robust and well-adapted to mountainous climatic and geographical conditions.
The Deviscio farm began with young goats, which were raised for an entire year according to our principles of nutrition and quality of life. Only after the kids were born did we start production at the dairy.
The bucks (billies) naturally mate around late August; two months before the kids are born in February, milking is suspended.
Milking is done using machines to obtain milk with reduced bacterial load, which is immediately processed raw on-site for cheese and yogurt production.
Our farm is certified free from CAEV.

The farming model we follow is inspired by the principles of Animal Welfare, which dictate that animals should live as naturally as possible. We strongly believe that animal welfare is an essential principle, which we adhere to in every activity here in Deviscio, and which translates into the only true sustainability: environmental, business, and food-related.
The result is high-quality products from both a sensory and taste perspective, distributed according to the principle of local production.

EDUCATIONAL FARM

Our facility is often chosen by schools and groups for school trips and educational farms.
The experience of an educational farm at Agriturismo Deviscio begins with an understanding of the environment and the values that guide us in caring for our ecosystem, which includes meadows, forests, mountains, and animals. Next, visitors learn about farming at Deviscio: the barn, the goats, and all stages of their life cycle and production.

Children always enjoy our cheese-making workshops, where we guide them through the discovery of this process that begins with caring for the animals in the barn, continues through the skilled hands of the cheese maker, and ends at the table with the finished product. It's a journey that allows us to impart important values to the younger generation and give them an experience to remember!
